Calling all Bakers with wedding cake experience?
Please...your thoughts and opinions on best ways to bake and decorate a three layer rolled fondant wedding cake that the bride would like to be traditional-(Ivory, Navy, and Silver are the wedding colors) I am a professional baker, but haven't yet done a cake on this scale! Am excited about the challenge...any tips, fellow bakers?
Bake your cake just like you would for any other cake. Flat ice or crumb coat the cake first or the fondant won't stick to the cake. Kneed the fondant just like you would bread dough. If you want you can color the fondant by using a few drops of coloring or a small amount of jell color. When you color it I'd use disposable gloves. roll the fondant to about 1/8 inch and BE PATIENT when you put it on the cake. If I were you i would go to my local cake supply store and get a plastic cake iron. It will help smooth the fondant when it gets wrinkles.
Big tip here: practice first. The nice thing about fondant is you can reuse it. Also after you put the fondant on the cake it will settle a little. I always trim my fondant a little short so this settling doesn't hurt anything. If you trim it too short you can always cover it with a border.

Is it acceptable to wear a brown suit for interviews rather than the traditional black,navy or grey?
Depends on how conservative the company is. But I would think that brown or tan would be perfectly acceptable to almost all companies these days.
I can't join the navy because my high school isn't a traditional school. I am still going to whatever I can and fight for it.
